Cava
Cava is Spain’s signature sparkling wine, with over 90% made in Catalonia, especially around Sant Sadurní d’Anoia near Barcelona. The name means “cellar” in Catalan, reflecting the underground caves where it ages on lees. While Catalonia is the heart, Cava also has protected DOP status, allowing production in regions like Aragón, La Rioja, Valencia, and Extremadura.
Made mainly from Macabeo, Xarel·lo, and Parellada, Cava ranges from fresh young wines to rich Gran Reservas. Wineries such as Castell D’Or and Juve y Camps showcase the quality and diversity of this sparkling tradition.
