Vinification

Crafted exclusively from Albillo Mayor grapes sourced from the Olivares de Duero vineyard at 880 meters above sea level. Grapes are hand-harvested in 10 kg boxes, naturally settled for 12 hours, then fermented in French oak barrels with bâtonnage. Aged for approximately 30 months on fine lees without racking or stirring, enhancing complexity and texture. Source
