Winemaking
Crafted from dry-farmed Monastrell vineyards planted on sandy-loam soils, influenced by surrounding Mediterranean forest and cooler mountain conditions. Grapes are hand-harvested to ensure optimal quality and then fermented in small stainless steel tanks at controlled temperatures, preserving purity of fruit, aromatic expression, and freshness. Vegan certified.
Tasting Notes
Bright cherry-red in colour with violet reflections and medium intensity. The nose is fresh, aromatic and expressive, unfolding layers of wild Mediterranean herbs, fresh flowers, cracked black pepper and vibrant red berry fruit such as raspberry and red cherry. Subtle balsamic and mineral notes add complexity and clearly reflect the surrounding mountain landscape.
On the palate, the wine is fresh, juicy and highly approachable, with lively acidity and soft, well-integrated tannins. Ripe red fruit flavours are balanced by a gentle spicy character and a smooth, rounded texture, giving the wine precision, balance and excellent drinkability.
The finish is long and persistent, leaving lingering hints of herbs, pepper and fresh berries. Overall, it is an elegant, balanced and highly expressive Monastrell that captures both freshness and sense of place.
Pairing Suggestions
Ideal with grilled lamb, roasted pork, and traditional Spanish stews. Also pairs very well with tapas such as cured meats, patatas bravas, mushroom dishes, and semi-cured cheeses. Its freshness also makes it suitable for Mediterranean dishes with herbs, tomato-based sauces, and grilled vegetables.
